Recycled Chocolate
Sometimes when I’m baking (in particular melting chocolate) things don’t always work out as planned. Sometimes chocolate is temperamental if the conditions aren’t quite right (level of heat or length of time melting it). Instead of melting smoothly, it can start to seize up and harden, no matter what you do.
So the other week I was needing smooth melted white chocolate for drizzling on to cookies, but it just wasn’t happening. Not wanting to waste it, I decided to turn it into something useful; I added some chopped dried cherries and pressed it into a pan and turned it into fudge squares, which didn’t exactly come out of the glass dish very well so I also had lots of broken bits to put aside for baking.
Sour dried cherries are my favorite thing right now, with white chocolate in scones or with hazelnuts and dark chocolate chips for a really yummy trail mix or snack.
This morning I had a craving for scones for breakfast. I took that crumbled white chocolate and chopped dried cherry mixture and used it in the scones. I also didn’t have any cream, so I used eggnog instead. Worked fine!
Glad it didn’t go to waste!
